What is dark honey? Beekeepers actually call this melter honey because it is the honey extracted from the wax melter while melting beeswax. Although it has not been heated enough to be considered pasteurized, it has been heated enough that some of those good pollens and enzymes that raw honey provides are no longer in there. However, this is a great option for baking and cooking because it adds more flavor and a beautiful dark color, and it’s going to be heated anyways. This is also the honey that Chris prefers in his coffee :)
